Short Bread...

Hubby loves shortbread.... and I very rarely make it.  The reason, creaming butter and sugar with a electric hand beater was just too hard!! LOL...

Now with my new toy it's a treat! so I've made it twice now... both in the same week, not good for the waistline!!

Lemon Melting Moments

250g butter
1/3 cup icing sugar
1 1/2 cups of plain flour
1/2 cup of cornflour

Lemon Cream
60g butter
1 teaspoon grated lemon rind
1/2 cup icing sugar
3 teaspoons of lemon juice



Beat butter and sifted icing sugar until light and fully.  Stir in sifted flours in 2 batches.

Place mixture into a large piping bag fitted with a fluted tube, and pipe swirls about 3cm apart.

Bake in a moderate (180°Coven for about 10 mins, or  unlit lightly browned.  Let stand for a few minutes before lifting onto a wire rake to cool completely.

Lemon Cream - Combine butter, rind, sifted icing sugar, beat until light and fluffy, add juice and beat till well combined.

Tip 1
I found 3 teaspoon of lemon too strong, 2 was more then enough.  I suggest adding a little and tasting as you go.
Tip 2
When I made it this time it the filling was too runny, adding extra icing sugar/mixture and beat well did the trick!

When cool,  join biscuits with lemon cream and enjoy!!


Shortbread

150g castor Sugar
300g Salted Butter - room temp
400g Plain Flour
50g Cornflour

Preheat oven to 160°C - Line baking trays

Beat butter and sifted icing sugar until light and fully. Add sifted flours and mix to form a stiff dough.

Tip the dough onto a floured worktop and gently knead until smooth.

Roll to about 1cm and cut into your desired shapes.  Transfer to trays and prick each one with a fork if desired.

Bake for 15-20 mins or until edges are golden.

Remove from over and sprinkle a little sugar over each shortbread, leave to cool on the tray for 10 mins then transfer to a wire rack to cool completely.


These where truly delicious!!

And then a walk up to our local waterfall to work some of that sugar and butter off!

Mum's Birthday Cake

I'm way behind in posting this..... such is my life, way behind in all things!!

So here is the cake I made for Mum a few weeks back....  just to recap, I found the recipe here...  Matters of the Belly 

The cake turned out a bit drier then were used to, not sure if I over baked it or not.  Flavor was lovely, and I was happy with the look..... but I'm not a big fan of Buttercream icing, so having it's "naked" so to speak was a big bonus for me.



Of course it's not a birthday cake until it has a candle ❤



Baking this cake got me thinking that I would really like a stand mixer!!... something I've thought about off and on for quite a while..... a couple of weeks after look what came on special!

Birthday Cake time

Mum's birthday is coming up this weekend... So I've spent the last week searching blogs and recipe sties for a cake to make.

Found this amazing cake on this blog,  Matters of the Belly , this photo just jumped out to me!!   I hope I can do it justice.

Salted Honey and Orange Blossom Naked Cake

I have everything on hand except Orange Blossom Water!... but I have a few days to find it :)

No scrapping to show yet... and as for the garden. it's time to prune the roses, so of course they are in bloom...


















Except my Spice Coffee rose.....and they would go perfect for Mum's cake!!

Welcome 2017

And bang..... it's July!!

I thought I would dust off the old blog and upload a page I finished this morning.... and found a draft I started at the start of the year!

umm... where did the first six months go??  is my life so hum-drum that I have nothing to write about?

I'm thinking yes!....... and no.  

Life is stupid busy most of the time.   13yr old, hubby, household stuff and running my little shop... and I've have been looking for part-time work as well.... no luck, but lots of looking and applying.

Life is busy, but not very exciting I suppose....

Time to find some fun again, I've not done any photography for ages, and my poor garden is over grown with winter weeds and grasses... so lets see if I can get back to writing this blog, recording the everyday moment that make up life.

First up... Mystical Scrapbooks,  July Challenge.  Our first challenge is a Tic-Tac-Toe challenge.
I chose Distressing - Chipboard - Grey Cardstock

For this page I've use all leftover scraps and bits!
I've distressed all the strips of paper.  I found a half WOW Loop Fence in my stash for chipboard, 
and used Core'dintation Gibraltar cardstock.

Quite like how it turned out.  While we where on our Christmas holidays down south, I couldn't get over how 
big and beautiful all the Agapanthus were!.... Mine are this sick little pathetic things.
I ended up chasing a bee around with my camera and caught him coming back out of a flower.

Where's my life....

It's been a couple of weeks since my last post.....and I honesty can't think of anything I have done that is worth blogging about!!  Washing, some housework and a little gardening, not really blog worthy...

Other than finally getting some scrapping done!


Mystical Scrapbooks November challenge :)  I had fun with texture page and blowing on paint drops!  I came across an story on Facebook about an artist that used little water colour paint drops on her work,  them blows in it to make this amazing images.  While mine wasn't meant to turn out the same, I had fun with the technique.



I've used the very cool Life in Colour from Simple Stories




After posting this I realize that this page also meets the criteria for Archi-scraps November challenge!

Bit of scrapping and a walk...

Finally got all my ducks lined up,  and I got to visit Lesmurdie Falls for the first time today!   This is literally 10 mins down the road and I've never been there!

So I kicked the boy off the Xbox, grabbed the dog, and a couple of bottles of water and off we went.

I couldn't get right to the bottom of the water fall, so next time I will leave the dog at home and take a back-pack for my camera and where more suitable clothes!

Ethan and I walked along the bottom trail before heading up to the look out ......what we didn't know was there is a nice path with nice safe steps leading up to the lookout.

The track we took, you needed to be part billy goat!!

 Ethan found a rock that made a perfect seat while he waited for me to catch up...sadly it's a bit blurry as I took the photo quickly ..



And before we when for our walk I finished off a scrap page for Mystical Scrapbooks 2nd Oct challenge.  I had fun with water colours again, and again got up use up bits of left over pieces from Fancy Pants Happy Place  range ....which I just love!!!

Mystical Scrapbooks have a Tic-Tac-Toe challenge this month, and I had so much fun with water colours on this page!


I got to use up some left over bits from one of my favourite ranges,  Fancy Pants - Happy Place, with lots of other bits from a few different ranges,,, I just went through my stash taking out all the soft blues :)
